Original Recipe Added To Our Breakfast Menu

We recently added an original dish to our guest pleasing breakfast recipes. It looks like a pancake but you will swear its a slice of Italian cream cake!  

We tested the dish on several of our recent guests with grand reviews.  

Randy's response to this original recipe was, "As the guinea pig for this breakfast, I can say without reservation, they were the bomb! If we don't get them on our next visit, I will be disappointed."

Italian Cream Pancake recipe

Follow the directions of your favorite (plain) pancake recipe or mix.  You may need to play with this a little to get the consistency you prefer. Then add:

1 (3.5oz.) package instant vanilla pudding
1 cup chopped walnuts or pecans
1 - 2 cups flaked coconut
 
Frosting:
8 ounces cream cheese
1/2 cup butter
1 teaspoon vanilla extract
4 cups confectioners' sugar
2 tablespoons light cream
1/2 cup chopped walnuts
1 cup sweetened flaked coconut

Cream together butter and cream cheese. Mix in next 5 ingredients.
This frosting recipe is very generous..you should have plenty for 6-10 pancakes depending our how much you use with each stack of pancakes.

Top each pancake with a liberal layer of frosting, add whip cream, a sprinkling of flaked coconut and your favorite chopped nuts.
